Lello Busiate With Meaty Vegetable Sugo:
Serves 2
+ INGREDIENTS
- 375g Lello Fresh Busiate Pasta
- 400g beef mice
- 1 tins whole peeled tomatoes (Lello Basil Sugo 500g)
- 1 whole red pepper finely diced
- 1 red onion diced
- 1 carrot diced
- 2 sticks celery
- 6 Swiss brown mushrooms quartered
- 2 cloves garlic
- 1 cup chicken stock/vegetable
- 1 dried bay leaf
- Parmesan cheese
- Parsley
- Salt & Pepper to taste
- 3 Tbs olive oil
+ METHOD
- In a deep frypan heat olive oil , lightly fry, garlic, onion with mince/sausages until golden brown. Add celery, carrot, red pepper, mushroom and cook until soft.
- Add tined tomato vegetable/chicken stock and Bay Leaf.
- Simmer for 30-40 min. Season with salt & pepper.
- Boil Lello Fresh Busiate as per cooking instructions, drain and toss with sugo mix.
- 5. Serve with chopped parsley and parmesan cheese.
