Gozleme – Turkey’s Darling Pastry

Gozleme, from the Turkish word közleme meaning “to grill or cook on the embers'' is a traditional stuffed turnover and popular street food in Turkey. Similar to a quesadilla, Gozleme is made from flatbread typically filled with lamb, beef, feta cheese, herbs and potatoes. The flatbread has a golden colour or brown spots when cooked over a griddle or stove.


Gozleme is served in many cafes and restaurants around Turkey but its humble recipe came from Turkish villages and towns where each has their own version of this humble flatbread. Because it is a traditional Turkish pastry, it’s typical to see older women sitting on the ground in front of a wooden short table preparing the gozleme dough. Locals enjoy gozleme for breakfast or as a snack any time of the day.


The difference between Gozleme and Pide

Pide is also a boat-shaped Turkish flatbread that is also stuffed with lamb, feta or spinach. More similar to a pizza, pide also has regional variations and a special recipe that is served during Ramadan. Both gozleme and pide are traditionally served with Turkish black tea or ayran, a Turkish yoghurt drink.

How to make a homemade Gozleme

Below are the recipes for Gozleme with two different fillings that you can make at home. But first, let’s start with making the flatbread.

+ INGREDIENTS (GOZLEME DOUGH)

  • All purpose flour, 2.5 cups or 375 grams
  • Extra virgin olive oil, ⅓ cups or 85 ml
  • Water, ¾ cups or 185 ml
  • Salt, ½ tsp

+ INGREDIENTS (FILLING: SPINACH AND CHEESE)

  • Baby spinach, 300 grams or 10 oz
  • 2 Garlic cloves, minced
  • 2 Eggs
  • Black pepper, 1 tsp
  • Danish feta, 300 grams or 10 oz
  • Mozzarella cheese, 2 cups or 200 grams shredded

+ INGREDIENTS (FILLING: SPICED LAMB OR BEEF)

  • Olive oil, 1 tbsp
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • Lamb mince or ground beef, 500 g or 1lb
  • 1 Bell pepper or capsicum, chopped
  • Baby Spinach, 90g or 3oz
  • Cumin powder, 1.5 tsp
  • Paprika, 1 tsp
  • Cayenne, ½ tsp
  • Salt and pepper, 3 tsp each
  • Water, 1 tbsp
  • Danish feta, 120g or 4oz

+ INGREDIENTS (FOR COOKING AND SERVING)

  • Olive oil, 1-1.5 tbsp per Gozleme
  • Lemon wedges (optional)

This recipe can produce 5 gozleme.

 METHOD (DOUGH)

  1. Use a mixer to make the dough. In the mixer bowl, combine flour, oil, salt and water. Mix on medium high speed for 2.5 minutes until soft and smooth but not sticky.
  2. Sprinkle with extra flour or water to achieve the consistency. Cover the mixer bowl and let it rest for 20 minutes.
  3. Cut the dough into 4 or 5 pieces.
  4. Roll the dough thinly into a 10-inch circle.
  5. Set aside to make the fillings

+ METHOD (FILLING: SPINACH AND CHEESE)

  1. In a bowl, mix the spinach, egg, pepper in a bowl with your hands.
  2. Add the cheese then stir through.

+ METHOD (FILLING: SPICED LAMB OR BEEF)

  1. Heat oil over high heat in a large skillet.
  2. Cook the garlic, onion and capsicum then add the beef or lamb after three minutes until the meat changes from pink to brown.
  3. Add cumin, paprika, cayenne, salt, pepper and water. After 2 minutes, add the spinach.

+ METHOD (MAKING THE GOZLEME)

  1. Spread a portion of the filling (your choice if it’s the spicy lamb/beef or spinach and cheese!) on half of the pastry.
  2. Sprinkle with feta or mozzarella cheese.
  3. Fold the other half to cover the filling. Press out excess air pockets.
  4. Heat 1.5 tbsp oil in a skillet over medium high heat. Slide the gozleme into the skillet. Lightly press it down until brown and crispy. Then, flip the other side and repeat the process. Cook for 2 minutes on each side. Add more oil if desired.
  5. Transfer to a plate or cutting board and serve with lemon wedges.
